Singapore food is loud in the best way: chilli, sambal, soy, ginger, coconut and wok hei, often all on one table. The good news is that a few simple principles make wine pairing with Chinese food much less intimidating, and Chinese wines are a natural place to start.

At Vinflow Wine Bar & Bistro, our shareable plates are built for passing around, which suits a table of different wines too. This guide covers the principles first, then applies them to Singapore favourites and to what we serve on Keong Saik Road. Everything here is a suggestion, not a rule: if you enjoy it, it works.

How do you pair wine with Chinese food?

Chinese and Singapore cooking rarely arrives one dish at a time. Dishes are shared, flavours overlap, and the table is a mix of sweet, salty, sour and spicy. That is why flexible, food-friendly wines tend to beat big, heavy ones. Five ideas do most of the work:

  • Acidity refreshes. Crisp, high-acid wines cut through oil, richness and fried textures, much as a squeeze of lime does.
  • Match sweetness to spice. A touch of fruit sweetness in a wine can soften chilli heat, which is why off-dry Riesling is so often suggested for spicy food.
  • Mind the tannin. Tannin and chilli heat tend to amplify each other, so very tannic reds can make spicy dishes feel harsher.
  • Aromatic with aromatic. Fragrant whites echo ginger, lemongrass, coriander and coconut rather than fighting them.
  • Light reds for umami. Soy, mushrooms and roast meats pair comfortably with juicy, lower-tannin reds.

Why Chinese wines suit Chinese food

There is no magic here: a wine does not pair better just because it shares a country with the dish. But China’s wine regions grow many of the same grapes as everywhere else, and several of the styles on our list happen to be flexible at the table. Riesling and Petit Manseng offer aromatics and freshness; Marselan tends towards dark fruit and spice; and a number of Chinese reds are made in a rounded, fruit-forward style. Published tasting cues for each wine are noted below, and they are typical profiles rather than our own tasted assessments. For the wider picture, see our Chinese wine collection in Singapore and our guide to Chinese wine regions.

What wine goes with chilli crab?

Chilli crab is the classic test. The sauce is sweet, tangy, savoury and spicy, and the crab itself is delicate. Reach for an aromatic white with bright acidity and a little fruit, or a chilled rosé. Avoid anything heavily oaked or tannic, which will fight the chilli.

Vinflow’s own take is the Chili Crab Dip with Mantou, described on our menu as a bold signature, crisp, rich and playful. A glass of Kanaan Riesling 2024 from Ningxia is a sensible first try; the published notes are grapefruit, green apple and blossom, which should bring lift and freshness to the richness. Kanaan Winery was founded in 2011 by Wang Fang, who studied in Germany and invited German winemakers to Ningxia, and its wines have been recommended by Jancis Robinson, Bernard Burtschy and Ian D’Agata.

What wine goes with spicy food?

Think freshness, fruit and restraint. Whites with lively acidity and a hint of sweetness are the safest choice, and fruity rosé is a good second. Longting Rising Light Collection Petit Manseng 2024 from the Penglai coast of Shandong is published as passionfruit, honeydew and citrus, an appealing profile for sambal-style heat. Longting is a boutique winery established in 2009 and committed to natural and biodynamic farming.

If you prefer red, choose something soft and fruity rather than grippy. A chilled glass of Bauzuan ALLOFME Rosé 2023, a Cabernet Sauvignon rosé from Yunnan with red berry and citrus notes, is another route. For a punchier dish such as our Balado Popcorn Chicken, crisp and layered with heat, you want a wine that refreshes between bites.

Wine with dim sum and light Cantonese dishes

Steamed, delicate dishes such as har gow and siew mai call for crisp, gentle whites. Tiansai Skyline of Gobi Chardonnay Muscat 2023 from Xinjiang is published as floral, crisp and gently fruity, which should suit shrimp and light dumplings. Tiansai was established in 2010 in the Yanqi Basin at the foot of the Tianshan mountains.

Sparkling wine is the other classic partner for dim sum, because bubbles and acidity reset the palate after fried or fatty bites. Grace Vineyard Angelina Brut Reserve 2014, a Chardonnay sparkling from Taigu in Shanxi with published notes of pineapple, toast and honey, is on our list for exactly that sort of occasion.

Char siew, roast meats and umami-rich dishes

Sweet-savoury glazes and roast fat suit a juicy, lower-tannin red. Silver Heights Jiayuan Pinot Noir 2023 is published as cherry and red berries; Silver Heights was founded in 2007 on the eastern slopes of the Helan Mountains. A rounded Merlot such as Chapter and Verse Select Merlot 2016 from Huailai in Hebei (plum, rounded fruit) is another good match, and it is currently on tap.

For chicken rice, with its gentle poultry, ginger and chilli-garlic sauce, a clean, citrusy Chardonnay is a safe bet, such as Silver Heights Chardonnay Reserve 2024 (citrus, orchard fruit) or Chapter and Verse Select Chardonnay 2018, also on tap.

Laksa, curries and coconut

Coconut milk, shrimp paste and chilli create richness with heat. Aromatic whites handle this best, so revisit the Riesling or Petit Manseng above. A fresh, off-dry style is more forgiving than a dry, oaked one.

Where to try it in Singapore: Vinflow’s wine wall

Vinflow is home to Singapore’s only 32-tap wine wall, and three of those taps currently pour Chinese wines, subject to change and availability:

  • Chapter and Verse Select Chardonnay 2018 (Hebei): orchard fruit and citrus.
  • Chapter and Verse Select Merlot 2016 (Hebei): plum and rounded fruit.
  • HUWEI “Zhuan” Marselan 2021 (Ningxia): black fruit, chocolate and spice. Read more in our Marselan guide.

Because the wall is self-pour, you can taste across styles and match each against a dish, rather than committing to a bottle. Our Trio Sausage Platter, built for sharing, is a good excuse to try the Marselan, and the Thin Crust Pizza (mushroom, margherita or meat lover) sits comfortably beside the Merlot.

To compare four Chinese wines side by side, there is the Premium Chinese Wine Flight: Kanaan Riesling 2024, Tiansai Skyline of Gobi Chardonnay Muscat 2023, Grace Vineyard Recalling The Year 2025 and Fei Tswei Lava Cabernet Franc 2021, one glass of each. It is a $20++ top-up to regular-priced free-flow ordered between 5 and 8 pm; refills are not included, promotional packages are excluded and terms are subject to change. Larger groups can also plan around this at our private events.

Frequently Asked Questions

Chinese wine pairing questions

What wine goes with Chinese food in Singapore?

Start with the style of the dish. Aromatic, off-dry or crisp whites such as Riesling suit spice and fragrant flavours, while lighter, juicy reds suit savoury, soy-based dishes. These are suggestions rather than rules, so follow your own taste.

What wine goes with chilli crab?

Chilli crab is sweet, savoury and spicy, so an aromatic white with bright acidity and a little fruit sweetness usually works well, and a chilled rosé is a good alternative. Vinflow's Chili Crab Dip with Mantou is a natural place to try Kanaan Riesling 2024, subject to availability.

What wine goes with spicy food?

Look for wines with refreshing acidity, modest alcohol and gentle tannins. Heavy tannin and high alcohol can make chilli heat feel stronger, while a touch of sweetness or fruit can soften it.

Can I pair red wine with dim sum?

Yes, if the red is light and soft. Lower-tannin reds such as Pinot Noir or a rounded Merlot can suit savoury steamed and fried dim sum, though many guests prefer a crisp white or sparkling wine.

Which Chinese wines can I try at Vinflow?

Vinflow's collection spans 32 Chinese wines from 15 wineries across seven regions. Current taps and the four-wine Premium Chinese Wine Flight are described below. Wine selection, vintages and availability are subject to change.
